AAHHHHHHHHHHH!

I just had to let that out :) I am so stinkin frustrated with Caleb's eye doctor. I'll try not to make this too long but I will explain a little so you can see where I'm coming from. When Caleb was about a year we noticed that his right eye would wander. So as it got worse we took him in to the eye doctor, which we were referred to by our pediatrician. So we go to the first appointment(he's not quite 2 yet.) And instead of seeing the doctor, we get some assistant or who knows, she never told us her name and didn't speak english very well. So she checks his eye and gives us the prescription for a -10 for the bad eye and nothing for the other(that's almost legally blind!). So we get the glasses, which come three days after I had Hannah(three weeks early!) so that was fun. We had to put an eye patch on the good eye for 6 hours a day. That was pure torture! He took that patch off so many times a day, we went through a box a day, almost. Anyway, so we go back in for a check up and the doctor changes his prescription....totally changes it. Now it's a +1 in the left eye and nothing in the bad one! WHAT! So with me having great eyes and knowing nothing of prescriptions, I got it filled. So we had to pay out of pocket for that lense and we went back to check with the doc because Nate had some questions for him. And this is when he refers us to a pediatric opthamologist. Um....that would have been helpful a long time ago! So we go and yada, yada, yada....We are still getting the run around. But now we are down to only patching for 3 hours a day. And the kid has broken his glasses, but it's just the side without the prescription so we have just glued, and glued, and glued the lense in mutiple times. Because for some reason, glue does not hold glass to metal...hmmmm.....go figure. So at his last appointment the doctor checks his eye and says that we just need to get the right prescription for him(which he had referred us to a regular eye doc to get) and we're like....huh? "I thought that's why we came to you?" And he's like...."I'm just checking out the muscle control," and we're like, "huh again?" So now we're supposed to pay for another appointment to find out the prescription? Hello? So now I have made an appointment with another pediatric doc that is in lubbock and luckily we got in right away. I want a second oppinion. We go on wednesday, april fool's so I hope it'll mean that they will be nothing but truthful with us and not send us all over. Please people just fix my kids eye, I don't care what you have to do! Yikes! I'm sorry this is so long, I just have to vent somewhere :)

Funny story...

So those of you who were at church heard that I got some new callings. I am a nursery leader and Activities committee member. Well after church I went to get set apart by the Bishop and Brother Dent. After it was over we were visiting about the kids (they were pretty noisy) and Bishop asked me a funny question. He said, "Are you guys going to have any more kids?" and I said, "Yeah, we will." So then he says, "When?" So of course, I blush and wonder what to say. Little did he know I had just taken a test this last week, and we are pregnant! So I told him, "Well in about 8 months!" I should have added the disclaimer that we weren't announcing quite yet, but hey! So the first lucky soul that was told was Laura, who just happened to be sticking around the church. She was suprised to hear the news from the Bishop and tried to plead my case that we weren't sharing, which Bishop assured her that we were since I had just told him (Huh?) So now you know! The baby is due at the end of November. It's still early yet and I was hoping to wait until I was past the scary part to share, but oh well. If you can't beat em, join em! Right?

I decided to spruce up Hannah's bedroom. I had been thinking about what to do for a long time, and finally I just did it. I still have some touch up to do, but for the most part it is done. I LOVE it! All I used was a can of spray paint and some black acrylic paint and Voila! Hannah loves it too, every time I point to it, she smiles and babbles :) She just can't quite say bug yet, but we're working on it! If anyone wants to paint on their walls, I'd be glad to help, it was so much fun!

We had a lot of fun with them here. It was a blast to go to Dallas. We went to Medieval Times, lunch at Fogo De Chao (A Brazillian steakhouse), lots of swimming, Fossil Rim, a trip to see the temple and lots of visiting along the way. We hope you all had a great Spring Break also!

Warning, high fat content!

So I tried out a new recipe...Three cheese Manicotti. It was fabulous, if I do say so myself :) So I thought I'd share what I did to the recipe I got off the box.

Manicotti
1 package manicotti, I think there were 14 in the box
2 15 oz containers ricotta cheese, I used whole milk HEB brand
1 package italian blend shredded cheese, it has the parmesan and mozzarella
grated parmesan, I didn't measure, I just shook til I thought it looked yummy!
minced onion, a couple shakes
garlic salt, I used Lawry's garlic salt which is coarse ground and has parsley
italian seasoning

Sauce
I use Prego with mushrooms, the big plastic bottle(I use a lot of sauce)
Add 1 can of crushed tomatoes
1 can Hunt's tomato puree
minced onion
Weber grill creations roasted garlic & herb

I let that simmer while I was getting everything else ready

DIRECTIONS
Cook manicotti according to package directions (I added some Olive Oil to the water so they won't stick together). Meanwhile, in a bowl, combine the ricotta cheese, 3 cups mozzarella cheese, Parmesan cheese, and seasonings. Spread 1 cup spaghetti sauce in ungreased 13-in. x 9-in. x 2-in. baking dish. Stuff manicotti shells with cheese mixture (I found using a butter knife worked the best, or cut the corner off a large ziploc) ; arrange over sauce. Top with remaining sauce.
Cover and bake at 375 degrees F for 35-40 minutes. Uncover; sprinkle with remaining mozzarella cheese. Bake 10 minutes longer or until cheese is melted and manicotti is heated through.

*I always add a lot of cheese. I put mine on before I put it in the oven and I didn't cook it as long, probably the 35 minutes would be fine. Also cook your noodles for less time than the package says, since you are putting it in the oven to bake, you don't want it soggy.

Then I finished it off with some garlic bread. Just a loaf of HEB french bread that I sliced and put butter with minced onion, minced garlic, garlic salt, and grated parmesan cheese. Then I put it in for 5-7 minutes at 350, or until the butter is all melted. MMMMMMMMM.....I want some more leftovers!

Our little princess

I wanted to get a good family picture, so we went over to the Museum of theSouthwest and took some. They turned out really good and I am really excited to get them developed!

We are a Happy Family! I need to play around with these on my photoshop to see if I can change them up a little. We couldn't get Hannah to look at the camera or smile most of the time :)
